Chakal Mixology was never just about bartending.
It was built on craftsmanship, resilience, and a belief that hospitality should be intentional — not ordinary.

Our story begins with Ernesto “Tito,” born in Sinaloa, Mexico, where resourcefulness, family, and hard work were a way of life.

After earning a degree in Industrial Engineering, Tito realized that growth required stepping into the unknown. With faith and determination, he moved to Sonoma, California to learn English and pursue new opportunities alongside his father, who had relocated years earlier in search of stability.

What began as a job bussing tables quickly became something more.

Inside Sonoma’s restaurants, Tito discovered the power of hospitality — the way atmosphere, service, and craftsmanship could transform a simple moment into a lasting experience. As he advanced into serving and eventually bartending, he became fascinated not just by cocktails, but by systems, efficiency, and the design behind great service.

Behind the bar, engineering met creativity.

And everything clicked.

From Craft to Concept

Although Tito briefly returned to engineering, he felt pulled back toward hospitality — a world where human connection and creativity lived side by side.

After returning to California, he committed fully to mastering the craft of beverage service and bar operations. Years behind the bar revealed something most guests never see:

A great bar is not just drinks.
It is workflow, design, preparation, and intentional detail.

When Tito met his wife and business partner, that understanding evolved into a shared vision — to build something authentic that honored both craftsmanship and entrepreneurship.

With little more than faith and determination, Tito sold his mountain bike to fund the beginning of Chakal Mixology.

He discovered a neglected vintage Argosy Airstream trailer and spent two years restoring it by hand, transforming it into a fully functional, commercial-grade mobile bar. Every detail reflected precision, efficiency, and pride in the work — values that still define the company today.
