Where It All Began

I am Ernesto, though everyone calls me Tito. I was born in the beautiful landscapes of Sinaloa, Mexico, where my story begins.

After completing my degree in Industrial Engineering, I discovered that to truly advance in my career, I needed to master English. My father had already moved to Sonoma, California after economic challenges in Mexico. With determination and faith in what lay ahead, I made the decision to cross borders into a new world of possibilities.

Discovering My True Passion

Studying in an American college while supporting myself as a busser was challenging, but rewarding. There was something special about the atmosphere in those Sonoma restaurants – a certain energy and connection that captivated me. As my English improved, I advanced to serving, observing with fascination how bartenders transformed simple ingredients into experiences.

I returned to Mexico briefly to pursue engineering, but found myself unfulfilled. The office environment lacked the creativity and human connection I had come to value. I felt called to something different, and decided to listen to that calling. Back to Sonoma I went.

Behind the bar is where I found my true element. The art of mixing, the stories shared across the counter, the craft of creating something that brings joy – this became my passion and purpose.

Creating Something Extraordinary

Meeting my wife changed everything. The entrepreneurial spirit I inherited from my father and grandfather awakened with new purpose. I wanted to create something authentic, something that honored the gifts and talents I’d been blessed with.

I sold my beloved mountain bike and invested everything into a dream called Chakal Mixology. While still working full-time as a bartender, I searched for and found a vintage Argosy Airstream trailer. It was neglected and forgotten, but I saw its potential. For two years, my hands worked tirelessly, transforming the trailer into something truly special. Every restoration and customization represented my commitment to excellence and efficiency. 

The Philosophy of Excellence

I believe deeply that excellence is not something you can turn on and off. It is a constant commitment. Whether I am crafting a complex mezcal creation or setting up one of our distinctive bars for your event, the same dedication flows through everything we touch.

We could take shortcuts and increase profits, but that is not our purpose. We exist to transform ordinary moments into extraordinary memories. To create experiences that remain with you long after the final sip.
